Delicious cookie recipes coming right up, my ladies, so hope you’re not dieting or, even worse, trying to give up sweets altogether! Now, as you probably know, chocolate chip cookies are my favorite but I’ll eat oatmeal cookies too, as well as pretty much every other cookie ever invented by mankind! And since I prefer mine straight out of the oven, there’s no other choice but to make them myself which, of course, means I’m browsing for the next best delicious cookie recipes at least once a week! But let me share a few I particularly loved and know you’ll love too.
Ah, well don’t you just love those days when all you have to do is type “delicious cookie recipes” for something truly fabulous to appear? That’s exactly how I found this recipe! I’ve skipped dates, converted measurements into grams and used any all purpose flour I had instead of a “Gold Medal” one but still tried my best to stick to the recipe you’ll find below (which belongs to bettycrocker.com, of course).
Ingredients:
Cookies:
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
1 2/3 cups Gold Medal® all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
Apple-Date Filling:
1 cup chopped dates
3/4 cup finely chopped peeled apple
1/4 cup granulated sugar
1 teaspoon grated orange peel
1/4 cup orange juice
Instructions:
Prepare cookie dough by beating or mixing sugars, butter, vanilla and egg until they’re well blended than add flour, baking soda, salt and cinnamon, mix well and leave aside (I refrigerated mine). Now combine all of the Apple Date filling ingredients into a saucepan (I’ve grated apples so the mixture would be smoother) and mix over medium heat until the mixture boils. Give it another five minutes to thicken nicely then chill. Roll the dough between two sheets of waxed paper into a 16X8 inches square, spread the filling on top, roll tightly then refrigerate for 2-3 hours. Preheat the oven to 375°F (180°C), cut the roll into slices (1/4 inch), arrange onto a cookie sheet and bake for about 10 to 15 minutes (until light brown).

Dear husband loves oats, which means this recipe was going to be an absolute success regardless of my fear that something may go wrong. Nothing went wrong, luckily, although I’ve used granulated sugar only, which meant that cookies aren’t going to be as chewy as they should have been. Cream butter and sugar until the mixture turns light then mix in eggs and vanilla and add the rest of the ingredients leaving the oats to add last. Shape the mixture into small balls, arrange them on a baking sheet and bake at 375°F (180°C) for about 10 to 12 minutes.

250grams of each butter, brown sugar and chocolate chips
350 grams all purpose flour
3 eggs
1 teaspoon vanilla extract

Instructions:

150 gr sugar
30 gr cocoa powder
1 teaspoon baking powder
2 eggs
250 gr flour
100 gr white chocolate (chopped)
100 gr dark chocolate (chopped)
Gravy:
50 gr almonds (ground)
1 dl heavy cream
100gr dark chocolate
Instructions:
Cream butter and sugar until light and fluffy then whisk in cocoa, baking powder and eggs, blend well and add four. Continue blending until the mixture is smooth then add chocolate bits and mix them in lightly by hand. Refrigerate for 15 minutes then cut into two parts and thin into two long strips as thick as a thumb. Place both strips onto a baking sheet and bake for 20 minutes (preheat the oven to 400°F/200°C). Remove it from the oven, reduce the temperature to 320°F/160°C, give dough 10 minutes to cool down before you cut it into bars and return into the oven for another 10 minutes. Let them cool down while you’re melting chocolate, stirring in heavy cream and letting it all simmer on low heat until thickened. Pour this creamy, chocolaty goodness over biscotti, sprinkle ground almonds and enjoy!

1 cup plus 2 tablespoons (255 grams) unsalted butter at room temperature (2 1/4 sticks)
1 cup (200 grams) sugar
1 cup (215 grams) light brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups (350 grams) all-purpose flour
3/4 cups (62 grams) unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
12 ounces (340 grams) milk chocolate chunks (about 2 1/2 cups)
Instructions:
Preheat your oven to 375°F (180°C) then cream butter and sugars until fluffy, add one then the other egg and vanilla extract mixing until the mixture is well combined. Use a second bowl to mix together all dry ingredients then combine two mixtures and mix in chocolate chips. Place spoonfuls of this mixture onto a baking sheet and bake for about 9 to 12 minutes.
