Ingredients:

1 ΒΌ cup corn oil
8 oz. Cream cheese
2 cup flour
ΒΌ cup butter
2 cup sugar
1 cup confectioners sugar
4 eggs beaten
1 tbsp. vanilla
2 tsp. baking soda
1 tsp. salt
5 carrots, blended
1 tbsp. cinnamon

Directions:

Preheat oven to 350 degrees F. First set the cream cheese and butter to the side a half hour for softening. For the batter, mix corn oil, sugar, and eggs together. Then add flour, baking soda, cinnamon, and salt. Stir in the blended carrots. Pour the batter into an ungreased 9x13 pan. Bake for 40 minutes. While the cake is baking, blend the cream cheese and butter to start the icing. Then add the confectioner's sugar and vanilla to finish the icing. After the cake is done, spread the icing on top and let it cool. Once you can’t wait any longer, start chowing down.
